Characteristics of the vineyard
Altitude: between 230 and 275 m above sea level
Exposure: west
Type of soil: soils originating from marine sediment, calcareous, not very deep and of average fertility
Planting System: Guyot, from 4000 to 4500 vines per hectare.
Harvest
Manual harvest, from the beginning to middle October; the grapes are carefully selected and placed in small baskets
Yield: 60-65 hectolitres of wine per hectare.
Vinification
The berries are gently destemmed and crushed.
Fermentation temperature: not exceeding 28 °C.
Length of maceration: 12 to 14 days, with daily remontage and delestage.
Malolactic fermentation: autumn.
Ageing in steel tanks: 3 months.
Ageing in wood: 6 – 9 months in Slavonian oak casks.
Ageing in bottle: 4 – 6 months.
Wine characteristics
Colour/Aroma/Taste: ruby red, with scents of preserved fruit and notes of vanilla and spices.
Alcohol content: 13% Vol.
Food pairing
With all first courses and soups, with white meat second courses, roast fish and soft cheeses.
Serve at 16 - 18 °C, in medium bowled glasses.
